The floral side of Meissa
Meissa is the star that marks the head of Orion, and it gives its name to every lot produced by Alex Herrera on the Pampojilá farm, in Guatemala's Atitlán region. FGRR shares its origin, variety and process with its sibling lots, but shows a completely different face: delicate, floral and elegant.
Pampojilá sits high on the slopes of the Atitlán volcano, above the lake, where volcanic soils and a natural mist protect the coffee trees. The Herrera family renovated the farm in 2012, continuing more than a century of coffee history on this land. Alex, the fifth generation of a Guatemalan coffee family, learned the craft alongside his parents and now blends that tradition with technical training and a focus on traceable, sustainable micro-lots.
The process: anaerobic fermentation and Sleeping Bag drying
This lot is 100% Caturra, grown between 1,480 and 1,800 metres and hand-picked selectively between January and March. The cherries are sorted by ripeness and then ferment whole without oxygen, before drying outdoors with the Sleeping Bag technique. The lot reaches an SCA score of 87.75.
In the cup
Meissa FGRR is floral and refined. Bright redcurrant leads, joined by white grape and the perfume of dark rose. Honey brings a round sweetness, and a gentle walnut note adds depth to the finish. The acidity is lively, with malic, citric and tartaric tones, and the body is medium and creamy.
How to brew it
We recommend the V60 to highlight its florals and clarity. A good starting point is 15 g of coffee to 250 g of water at about 92 °C, with a medium-fine grind and a total brew time of around 3 minutes.

O lado floral de Meissa
Meissa é a estrela que marca a cabeça da constelação de Orion, e dá nome a todos os lotes produzidos por Alex Herrera na quinta Pampojilá, na região de Atitlán, na Guatemala. O FGRR partilha a origem, a variedade e o processo com os outros lotes Meissa, mas mostra uma face completamente diferente: delicada, floral e elegante.
A Pampojilá fica na parte alta das encostas do vulcão Atitlán, sobre o lago, onde os solos vulcânicos e uma névoa natural protegem os cafeeiros. A família Herrera renovou a quinta em 2012, dando continuidade a mais de um século de história cafeeira nesta terra. Alex, a quinta geração de uma família cafeeira guatemalteca, aprendeu o ofício ao lado dos pais e junta hoje essa tradição à formação técnica, com foco em microlotes rastreáveis e sustentáveis.
O processo: fermentação anaeróbica e secagem Sleeping Bag
Este lote é 100% Caturra, cultivado entre os 1.480 e os 1.800 metros e colhido à mão de forma seletiva entre janeiro e março. As cerejas são selecionadas pelo grau de maturação e fermentam inteiras sem oxigénio, secando depois ao ar livre com a técnica Sleeping Bag. O lote atinge uma pontuação SCA de 87,75.
Na chávena
O Meissa FGRR é floral e requintado. A groselha vermelha abre caminho, acompanhada de uva branca e do perfume de rosa escura. O mel traz uma doçura redonda e uma nota suave de noz dá profundidade ao final. A acidez é viva, com tons málicos, cítricos e tartáricos, e o corpo é médio e cremoso.
Como preparar
Recomendamos o V60 para realçar os florais e a clareza. Um bom ponto de partida são 15 g de café para 250 g de água a cerca de 92 °C, com moagem média-fina e um tempo total de cerca de 3 minutos.
