A star above Lake Atitlán
Meissa is the star that marks the head of Orion, and it gives its name to every lot produced by Alex Herrera on the Pampojilá farm, in Guatemala's Atitlán region. Each lot from the farm carries the Meissa name, followed by a code that tells them apart by flavour, aroma and process.
Pampojilá sits high on the slopes of the Atitlán volcano, above the lake. Its volcanic soils and the natural mist that settles over the coffee trees protect the plants and shape the character of the cup. The Herrera family renovated the farm in 2012, giving new life to a property with more than a century of coffee history.
Alex is the fifth generation of a Guatemalan coffee family. He grew up following his parents through the fields and the processing area, learning every detail of the work. Today he combines that family knowledge with technical training and international experience, producing traceable, sustainable, high-quality micro-lots.
The process: anaerobic fermentation and Sleeping Bag drying
This lot is 100% Caturra, grown between 1,480 and 1,800 metres and hand-picked selectively, cherry by cherry, between January and March. After sorting by ripeness, the whole cherries ferment anaerobically, without oxygen. They are then dried outdoors using the Sleeping Bag technique. The result is an intense, expressive natural coffee with an SCA score of 88.
In the cup
Meissa VGN has a winey profile, led by deep blackcurrant. Around it sits a generous bowl of tropical and citrus fruit: passion fruit, pineapple, lychee, kiwi, melon and tangerine. A layer of dark chocolate grounds the fruit. The acidity is lively, with malic, citric and tartaric tones, and the body is medium and creamy.
How to brew it
We recommend the V60 to bring out its layers of fruit. A good starting point is 15 g of coffee to 250 g of water at about 92 °C, with a medium-fine grind and a total brew time of around 3 minutes.

Uma estrela sobre o Lago Atitlán
Meissa é a estrela que marca a cabeça da constelação de Orion, e dá nome a todos os lotes produzidos por Alex Herrera na quinta Pampojilá, na região de Atitlán, na Guatemala. Cada lote da quinta leva o nome Meissa, seguido de um código que os distingue pelo sabor, aroma e processo.
A Pampojilá fica na parte alta das encostas do vulcão Atitlán, sobre o lago. Os solos vulcânicos e a névoa natural que cobre os cafeeiros protegem as plantas e moldam o carácter da chávena. A família Herrera renovou a quinta em 2012, dando nova vida a uma propriedade com mais de um século de história no café.
Alex é a quinta geração de uma família cafeeira guatemalteca. Cresceu a acompanhar os pais no campo e no processamento, aprendendo cada detalhe do trabalho. Hoje junta esse saber familiar à formação técnica e à experiência internacional, produzindo microlotes rastreáveis, sustentáveis e de alta qualidade.
O processo: fermentação anaeróbica e secagem Sleeping Bag
Este lote é 100% Caturra, cultivado entre os 1.480 e os 1.800 metros e colhido à mão de forma seletiva, cereja a cereja, entre janeiro e março. Depois de selecionadas pelo grau de maturação, as cerejas inteiras fermentam em anaerobiose, sem oxigénio. Secam depois ao ar livre com a técnica Sleeping Bag. O resultado é um natural intenso e expressivo, com uma pontuação SCA de 88.
Na chávena
O Meissa VGN tem um perfil vinoso, liderado por groselha negra profunda. À volta dela surge uma taça generosa de fruta tropical e cítrica: maracujá, ananás, líchia, kiwi, melão e tangerina. Uma camada de chocolate negro dá-lhe base. A acidez é viva, com tons málicos, cítricos e tartáricos, e o corpo é médio e cremoso.
Como preparar
Recomendamos o V60 para revelar todas as camadas de fruta. Um bom ponto de partida são 15 g de café para 250 g de água a cerca de 92 °C, com moagem média-fina e um tempo total de cerca de 3 minutos.
