Gran Galope lots are Excelso grade coffees (screen bean size 15/16) that have been tasted and evaluated for their versatility.
These blends have a balance of sweetness, fruity effervescence and a cocoa and toffee base.
The Excelso Gran Galope batch is a blend of coffees from 10 to 30 small farmers and is traceable to the region.
Colombia is best known for its washed/washed processing coffees.
While processing details may vary slightly from farm to farm or by association, generally coffee is harvested ripe and pulped the same day, then fermented outdoors in tanks or buckets for 12 to 36 hours.
The coffee is subsequently washed of its mucilage before being dried on patios, in parabolic dryers, solar dryers.
The most cultivated coffee varieties in Colombia are Castillo, Caturra and the Colombia variety.
This Gran Galope lot is representative of this blend of popular varieties.
Cauca is located in the center-west of Colombia, stretching from the Cordillera Occidental to the Pacific Ocean.
Ocean winds and elevation make Cauca one of the coldest regions in the country.
Coffee in this area is grown mainly by indigenous or Afro-descendant communities.
Geographically, the region has many features, including the Popayan Plateau, many rivers and the central volcanic mountain range.
Many, many things make Colombia a particularly special place among famous coffee producing countries.
Everyone knows Colombian coffee - or thinks they do.
However, simply saying that a coffee is from Colombia is only telling a fragment of the story, like recommending a book to a friend just by giving the name of the publisher.
To really get to know coffee in Colombia is to travel thousands of kilometers, taste thousands of coffees and put on dozens of pairs of hiking boots covering hundreds of coffee farms from North to South.
Even this is just the beginning - but every beautiful story needs a beginning.
